Chet's Mapled Roast Venison


5 lb Saddle of Venison, prepared for easy carving
Dried Juniper Berries
Peppercorns
6-8 strips Thick-Sliced Bacon
Marinade - 2 cups Apple Cider
1 cup Maple Syrup

Stud the venison with juniper berries and peppercorns.
Lay bacon strips over the top and secure with toothpicks.
Place on a rack in a large roasting pan.
Prepare marinade by simmering the Maple Syrup and apple cider in a 
saucepan, stirring constantly, until well dissolved and steaming.
Roast the venison in a pre-heated 350° oven for 1 1/2 hours, basting
frequently. Let the roast rest for 15 - 20 minutes before carving.
Serve with wild rice or roasted herbed baby potatoes.
