Rollins Family Baked Beans

4 lb Soldier Beans 2 cups Dark Maple Syrup
1 large Onion 1 tsp Ginger
1 cup Dark Brown Sugar 1 lb Lean Salt Pork - cut into pieces
1 Tbsp Salt 2 Tbsp Baking Soda

Soak beans overnight, then boil until the skins on the beans start
to wrinkle. Remove from heat. Add baking soda and stir until liquid
foams. Drain and rinse with warm water. Set aside in a large baking pan.
Combine sugar, ginger, and salt in a saucepan with 2 quarts of water.
Bring to a boil, and then pour over beans. Bake at 350� until done. Test
beans when nearly done for sweetness, adding more Maple Syrup if needed.
