Maple Sap or Maple Syrup
New Growth Black Spruce Twigs
1 package Activated Dry Yeast
Boil 20 gallons of Maple Sap until it has reduced to about 4 gallons
of Maple Syrup. If you can't get Maple Sap, add 3 gallons of water
to 1 gallon of Maple Syrup and heat to boiling. Gather 1/2 peck (1
gallon) of new growth from the ends of the twigs of the Black Spruce.
Wash and drain the spruce and place in a large container.
Pour the boiling syrup over the twigs and steep until the syrup has
cooled to lukewarm. Strain through a cheesecloth into a 5 gallon crock
and add 1 package of activated dry yeast. Keep the crock covered with a
cloth for about a week. When the beer stops foaming and the cloudiness
starts to clear up, pour into clean bottles and cap tightly. Store in a
cool, dry place for about 3 weeks.
